Ingredients

  • 1 cup self raising flour
  • 2 tbsp sugar
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 2 tbsp olive oil
  • 1 egg
  • 2 tsp pure vanilla extract
  • 1/2 cup unsweetened almond milk
  • 1/4 cup sugar
  • 1/3 cup reduced fat cream cheese
  • 2 tbsp powdered sugar
  • 2 tbsp strawberry jam

Steps

  1. Heat the oven to 350 F and lightly oil a 24-cup mini muffin pan.
  2. Whisk the flour, 2 tablespoons sugar, salt, baking powder, and baking soda in a bowl.
  3. Whisk the olive oil, egg, vanilla, and almond milk in another bowl, then stir the wet mixture into the dry mixture.
  4. Fill the mini muffin cups about two-thirds full and bake for 10 to 12 minutes, until the centers spring back.
  5. Cool the donut holes in the pan for 15 minutes.
  6. Beat the cream cheese, powdered sugar, and strawberry jam, then pipe the filling into the cooled donut holes.
