Ingredients

3 generous pinches of best-quality saffron
2 tbsp thick greek yogurt
1 unwaxed lemon zested and juiced
2 tsp lemon extract
800 g 1kg skinless cod fillets

Steps

Heat the oven to 425 F.
Soak the saffron in 1 tablespoon of warm water for 2 minutes.
Stir the saffron water, yogurt, lemon zest, lemon juice, and lemon extract in a small bowl.
Place the cod in a lightly oiled 9-by-13-inch baking dish and spread the yogurt mixture over it.
Bake for 10 to 12 minutes until the fish flakes easily and reaches 145 F.
