Ingredients

  • 3 beets
  • 3 potatoes
  • 3 carrots
  • 1/2 cup sauerkraut
  • 3 pickles
  • 2 tbsp sunflower or olive oil
  • 1 tbsp white vinegar
  • 1 small onion

Steps

  1. Peel and dice the cooked beets, potatoes, and carrots into small pieces.
  2. Dice the pickles and onion, then drain the sauerkraut well.
  3. Whisk the oil and vinegar in a large bowl with salt and pepper.
  4. Add the vegetables, pickles, onion, and sauerkraut, then toss gently.
  5. Cover the bowl and chill the salad for 60 minutes before serving.
