4 beets
2 tbsp extra virgin olive oil
1/2 tsp sea salt
1 tbsp white wine vinegar
1 tbsp chopped fresh herbs

Steps

Heat the oven to 400 F and place the beets in a small baking dish.
Rub the beets with oil and roast for 40 to 45 minutes, until a knife slides in easily.
Cool the beets until safe to handle, then peel and slice them.
Toss the beet slices with vinegar, herbs, salt, and pepper.
