1/2 sweet onion
2 serrano peppers
2 tsp dried dill
2 tbsp mustard seeds
2 tbsp mixed whole peppercorns
1 1/2 cups raw apple cider vinegar
1 cup granulated sugar
1 1/2 tbsp kosher salt

Steps

Slice the cucumbers and onion, and cut the serrano peppers into thin rings.
Combine the vinegar, sugar, kosher salt, dill, mustard seeds, and peppercorns in a small saucepan.
Heat the brine over medium heat for 5 minutes, stirring until the sugar dissolves.
Pack the vegetables into a heatproof bowl or jar.
Pour the hot brine over the vegetables and cool for 20 minutes before serving.
