  • 1 bay leaf
  • 1 tsp whole black peppercorns
  • 5 tsp kosher salt
  • 1 lb tomatillos
  • 3 serrano chiles
  • 1/2 cup cilantro
  • 1 1/2 cups sour cream
  • 3/4 cup vegetable oil (optional)
  • 12 large corn tortillas

  • 3 cups shredded oaxaca cheese
  • 1/2 cup crumbled cotija cheese (optional)

Steps

  1. Simmer the chicken, half the onion, garlic, bay leaf, peppercorns, and four teaspoons salt in water for 40 minutes, until the chicken reaches 165 F.
  2. Boil the tomatillos and serranos in water for 10 minutes, then blend them with the cilantro, sour cream, and remaining salt.
  3. Blister the poblanos in a dry skillet over medium-high heat for 10 minutes, then cool, peel, seed, and slice them.
  4. Fry the tortillas in a little oil in a large skillet for about 15 minutes total, then shred the chicken and save one cup of its cooking liquid.
  5. Layer tortillas, chicken, poblanos, sauce, queso fresco, and Oaxaca cheese in a 9-by-13-inch baking dish, then rest the assembled casserole for 10 minutes.
  6. Bake at 375 F for 35 minutes, then rest for 5 minutes before cutting.
