2 tbsp maple syrup
1 pinch kosher salt
1/2 tsp vanilla extract
1 tbsp lemon juice
1 lemon
2 cups unsweetened coconut flakes/shredded coconut
1/2 cup dark chocolate chips
1/2 tbsp coconut oil
zest of 1/2 a lemon

Steps

Heat the oven to 325 F and line a baking sheet.
Whisk the egg whites, maple syrup, salt, vanilla, lemon juice, and lemon zest in a bowl.
Fold in the shredded coconut until evenly coated.
Scoop 16 mounds onto the baking sheet and bake for 16 to 18 minutes, until firm and lightly golden.
Cool the macaroons for 5 minutes, then melt the chocolate chips with coconut oil and drizzle the mixture over them.
