Ingredients

  • 1/4 cup oil
  • 1/4 cup maple syrup
  • 1/4 cup smooth sunbutter or use almond butter
  • 1 tsp vanilla extract
  • 1/2 tsp lemon juice
  • 1/4 tsp salt
  • 1/2 tsp cinnamon (optional)
  • 1/2 cup oats
  • 3/4 cup cup flour
  • 1/2 tsp baking soda
  • 1/3 cup vegan chocolate chips

Steps

  1. Heat the oven to 350 F and line a baking sheet.
  2. Stir oil, maple syrup, sunbutter, vanilla, lemon juice, salt, and cinnamon in a bowl.
  3. Mix in oats, flour, and baking soda until a dough forms.
  4. Fold in the chocolate chips.
  5. Scoop 12 portions onto the sheet and bake for 10 to 12 minutes.
