Ingredients

2 large eggs
1 pinch fine sea salt
1/2 tbsp unsalted butter
1/4 cup shredded mozzarella

Steps

Whisk the eggs with salt in a small bowl.
Melt the butter in an 8-inch nonstick skillet over medium heat.
Pour in the eggs and cook for 2 minutes, gently lifting the edges as they set.
Sprinkle the mozzarella over one half and cook for 30 seconds.
Fold the omelette over the cheese and cook until the eggs are firm.
