Ingredients

3/4 cup almond flour
1/2 cup spelt flour
1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp ginger
1/8 tsp salt
2 tbsp molasses
1/4 cup honey
1/2 tsp vanilla extract
1 egg
1 tbsp melted coconut oil
1/3 cup dark chocolate
2 tbsp sugar
1/2 tsp cinnamon

Steps

Stir the almond flour, spelt flour, baking soda, cinnamon, ginger, and salt in a bowl.
Mix the molasses, honey, vanilla, egg, and melted coconut oil in another bowl.
Stir the wet mixture into the dry mixture, then fold in the dark chocolate.
Cover and chill the dough for 2 hours.
Heat the oven to 350 F and mix the sugar with the remaining cinnamon.
Shape the dough into 12 balls, roll them in the cinnamon sugar, and place them on a baking sheet.
