3 tbsp adobo red chile paste
2 tbsp brown sugar
2 tbsp fresh lime juice
2 tsp kosher salt
4 small russet potatoes

Steps

Heat the oven to 425 F and line a large baking sheet with oil if desired.
Cut the potatoes into thin fries and soak them in water for 5 minutes.
Drain and dry the potatoes, then spread them on the baking sheet with 1 teaspoon salt.
Roast the fries for 30 minutes, turning them halfway through.
Stir the adobo paste, brown sugar, lime juice, and remaining salt in a small bowl.
Toss the hot fries with the chile mixture and serve.
