Ingredients
- 2 cups bob's red mill tri-color pearl couscous
- 3 tbsp butter
- 2 lemons
- 1 tbsp olive oil
- 5 1/2 basil leaves
- 1 tsp salt
Steps
- Bring 3 cups water and the salt to a boil in a medium saucepan.
- Stir in the pearl couscous, reduce the heat to low, cover, and simmer for 10 minutes.
- Melt the butter and olive oil in the saucepan, then stir until the couscous is coated.
- Mix in the lemon juice, lemon zest, and chopped basil, then cook for 2 minutes.
