Ingredients

  • 1/2 cup finely grated parmesan cheese
  • 3 tbsp extra-virgin olive oil
  • 1/2 cup panko breadcrumbs
  • 6 cups italian kale
  • 2 tbsp freshly squeezed lemon juice
  • 1 large avocado
  • caesar dressing

Steps

  1. Tear the kale into a large bowl and remove the tough stems.
  2. Add the lemon juice and massage the kale for 2 minutes until tender.
  3. Toss the kale with the Caesar dressing, olive oil, parmesan, and panko.
  4. Dice the avocado, fold it into the salad, and season with salt and pepper.
