2 lb sweet potatoes
1 1/2 cup coconut milk
1 1/2 cup brown sugar
1/2 cup all purpose flour
1 tbsp vanilla extract
1 tsp allspice
1 tsp ground cinnamon
1 tsp ground nutmeg
1/2 tsp ground ginger
1/4 tsp salt
1/2 cup raisins
3/4 cup coconut milk
1 tbsp brown sugar
1/8 tsp ground cinnamon
1/8 tsp ground nutmeg

Steps

Heat the oven to 350 F and grease a 9-by-9-inch baking pan with cooking oil.
Peel, cube, and boil the sweet potatoes in a large pot of water for 15 minutes, then drain and mash.
Stir the mashed sweet potatoes with 1 1/2 cups coconut milk, 1 1/2 cups brown sugar, flour, vanilla, allspice, cinnamon, nutmeg, ginger, salt, and raisins.
Spread the batter in the prepared pan and bake for 30 minutes.
Stir the remaining coconut milk with 1 tablespoon brown sugar, cinnamon, and nutmeg.
Pour the topping over the pudding and bake for 10 minutes, until set.
