175 g plain flour plus extra for dusting (optional)
100 g cold salted butter cut into cubes
335 g icing sugar
1/2 tsp vanilla extract
2 egg yolks
100 g raspberry jam
50 g glacé cherries quartered

Steps

Heat the oven to 350 F and line a large baking sheet with baking paper.
Rub the cold butter into the flour and 50 grams of icing sugar until crumbly.
Mix in the egg yolks and vanilla, then press the dough together and chill it for 10 minutes.
Roll the dough on a lightly floured surface to 1/8-inch thickness and cut 26 rounds.
Bake the rounds for 10 to 12 minutes until lightly golden, then cool them completely.
Spread jam over 13 biscuits, top with the remaining biscuits, and mix the remaining icing sugar with a little water for icing.
Spread icing over each sandwich and finish with the quartered cherries.
