1 lb strawberries

2 tbsp honey
1 tsp vanilla extract
1 pinch salt
3 tbsp white sugar

Steps

Hull and halve the strawberries, then place them in the Instant Pot.
Stir in the lemon zest, lemon juice, honey, vanilla, salt, and sugar.
Cook on high pressure for 1 minute, then let the pressure release naturally for 10 minutes.
Release any remaining pressure carefully and stir the compote.
