- 1 cup glutinous rice
- 2/3 cup cold water
- 2/3 cup coconut milk
- 1/4 cup + 1 tablespoon sugar
- 1 pinch salt
- 1 mango
- 2 tbsp coconut flakes
- 1/2 cup coconut milk
- 2 tbsp sugar
- 1 tbsp cornstarch

Steps
- Rinse the glutinous rice and add it with 2/3 cup cold water to a 6-quart pressure cooker.
- Cook on high pressure for 12 minutes, then let the pressure release naturally for 10 minutes.
- Stir 2/3 cup coconut milk, 1/4 cup plus 1 tablespoon sugar, and a pinch of salt into the hot rice.
- Whisk 1/2 cup coconut milk, 2 tablespoons sugar, cornstarch, and two pinches of salt in a small saucepan.
- Cook the sauce over medium heat for 4 minutes, stirring until thickened.
- Top the sticky rice with mango, coconut sauce, and coconut flakes.
