1 egg yolk
1 tsp vanilla extract
1/2 cup avocado oil
2/3 cup sugar
1/2 cup all-purpose flour
1/3 cup cocoa powder
1/4 tsp baking soda
1/4 tsp sea salt
1/4 cup mini chocolate chips

Steps

Whisk the egg, egg yolk, vanilla, avocado oil, and sugar in a medium bowl.
Stir in the flour, cocoa powder, baking soda, and salt until just combined, then fold in the chocolate chips.
Spread the batter in a greased 7-inch round pan and cover the pan tightly with foil.
Pour 1 cup water into the Instant Pot, add the trivet, and set the covered pan on it.
Cook on high pressure for 30 minutes, then let the pressure release naturally for 10 minutes.
Remove the pan and cool the brownies for 20 minutes before slicing.
