Ingredients
- 2/3 lb ground beef
- 1 1/2 cups spinach
- 3/4 cup jasmine rice
- 7 cups cold water
- 1 stalk green onion
- 1/3 tsp fine sea salt
- 1/4 tsp sesame oil
- 1/3 tsp ground white pepper
Steps
- Rinse the rice under cold water and drain it.
- Set a 6-quart pressure cooker to sauté, cook the beef for 8 minutes until it reaches 160 F, and drain excess fat if needed.
- Add the rice, water, salt, sesame oil, and white pepper, then scrape the pot bottom clean.
- Lock the lid and cook on high pressure for 30 minutes.
- Let the pressure release naturally for 15 minutes, then carefully release any remaining pressure.
- Stir in the spinach and green onion, and let the congee stand for 5 minutes before serving.
