Steps

Heat the oven to 425 F and cut the potatoes into thick wedges.
Separate the garlic head into cloves and place the cloves with the potatoes in a 9-by-13-inch baking dish.
Toss the potatoes and garlic with lemon juice, oregano, olive oil, and salt.
Roast uncovered for 45 minutes, turning the potatoes halfway through.
Add a little water to the dish and roast for 15 more minutes until the potatoes are tender and browned.
