1/4 red bell pepper
1 1/2 tbsp onion
1 1/2 tbsp diced cucumber [optional]
2 1/2 tbsp plain greek yogurt

Steps

Cut the potatoes into bite-size pieces and boil them in salted water for 12 to 15 minutes until tender.
