Ingredients

  • 4 oz bittersweet chocolate
  • 1 1/2 cups 2 % or low fat milk
  • 1 tsp cornstarch
  • 1 cup + 2 tsp water
  • 1/2 cup unsalted butter
  • 1 tsp granulated sugar
  • 1/2 tsp kosher salt
  • 1 cup gluten-free all purpose flour
  • 5 large eggs
  • oil for frying (optional)
  • 1/2 cup granulated sugar
  • 2 tsp ground cinnamon
  • 1 tsp vanilla powder (optional)

Steps

  1. Heat the water, butter, sugar, and salt in a medium saucepan over medium heat until boiling.
  2. Stir in the gluten-free flour until a thick dough forms, then cool it for 10 minutes.
  3. Beat in the eggs one at a time until the dough is smooth.
  4. Heat frying oil to 350 F in a deep saucepan and fry short dough strips for 2 to 3 minutes per side.
  5. Drain the churros and coat them with the cinnamon and sugar.
  6. Whisk the milk and cornstarch in a saucepan, heat until thickened, then stir in the chocolate and vanilla powder.
