Ingredients

1/2 cup powdered sugar
1 tsp granulated sugar
3 tbsp oil
3 tbsp blackstrap molasses
1 tbsp non dairy milk
1/2 tsp ground ginger
3/7 tsp cinnamon
1 generous pinch of salt
1/2 tsp baking soda

Steps

Heat the oven to 350 F and line a baking sheet with parchment.
Stir the powdered sugar, granulated sugar, oil, molasses, non dairy milk, ginger, cinnamon, salt, baking soda, and spelt flour into a dough.
Divide the dough into 9 portions and place them on the baking sheet.
Flatten each portion slightly and bake for 12 minutes.
Cool the cookies on the sheet for 5 minutes before moving them.
