Ingredients

  • 6 russet potatoes
  • 3 1/2 tbsp olive oil
  • 8 tbsp unsalted butter
  • 3 tbsp olive oil
  • 4 cloves garlic
  • 2 tbsp chopped chives
  • 1 tbsp chopped fresh thyme
  • 1 tbsp chopped fresh rosemary
  • 1 tsp salt
  • 1/2 tsp each pepper

Steps

  1. Heat the oven to 400 F and place the potatoes on a baking sheet.
  2. Cut narrow slices across each potato without cutting through the bottom, then brush them with 3 1/2 tablespoons olive oil.
  3. Bake the potatoes for 55 minutes, brushing the slices with pan oil halfway through.
  4. Melt the butter in a small pan, cook the garlic for 1 minute, and stir in the chives, thyme, rosemary, salt, and pepper.
  5. Brush the potatoes with the garlic butter and bake for 15 minutes more.
  6. Top the potatoes with Gouda and bake for 10 minutes, until tender and the cheese melts.
