Ingredients

  • 1 cup vanilla wafer cookie crumbs
  • 1 tbsp granulated sugar
  • 3 tbsp unsalted butter
  • 3/4 cup granulated sugar
  • 1 1/2 tbsp all-purpose flour
  • 16 oz cream cheese
  • 2 large eggs
  • 1/4 cup sour cream
  • 3 tbsp heavy cream
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp almond extract
  • 1/4 cup + 2 tsp rainbow jimmies sprinkles (optional)
  • sweetened whipped cream (optional)

Steps

  1. Heat the oven to 325 F and line a 12-cup muffin pan with paper liners.
  2. Mix the wafer crumbs, one tablespoon sugar, and melted butter, then press the mixture into the cups.
  3. Beat the cream cheese, remaining sugar, flour, eggs, sour cream, heavy cream, vanilla, and almond extract until smooth.
  4. Fold in the sprinkles, divide the batter among the cups, and top with more sprinkles.
  5. Bake at 325 F for 20 minutes, then cool the mini cheesecakes for 11 minutes.
