Ingredients

1 lb large shrimp peeled with tail left on
20 spring roll/egg roll wrappers
1 cup sweet and sour sauce
canola oil for frying (optional)
salt & pepper

Steps

Pat the shrimp dry and season them with salt and pepper.
Place one shrimp on each wrapper, fold the wrapper around it, and seal the edge with water.
Heat 2 inches of canola oil to 350 F in a deep, heavy pan.
Fry the wrapped shrimp in batches for 3 to 4 minutes, turning once, until golden and the shrimp reach 145 F.
Warm the sweet and sour sauce in a small saucepan for 3 minutes.
Drain the fried shrimp on a paper towel and toss them with the warm sauce.
