Ingredients

  • 1 1/2 cups oat flour gluten-free if needed
  • 1 tsp non-gmo cornstarch
  • 3/4 tsp baking soda
  • 1/4 tsp salt
  • 1/3 cup unsalted butter
  • 6 tbsp raw organic cane sugar
  • 3 tbsp coconut sugar
  • 2 tbsp water
  • 1 tbsp avocado oil
  • 2 tsp baking powder
  • 3/4 tsp vanilla extract
  • 1/3 cup dairy-free chocolate chips

Steps

  1. Whisk the oat flour, cornstarch, baking soda, salt, and baking powder in a bowl.
  2. Melt the butter, then stir in the sugars, water, oil, and vanilla.
  3. Stir the dry mixture into the butter mixture, then fold in the chocolate chips.
  4. Cover and chill the dough for 2 hours.
  5. Heat the oven to 350 F and place rounded tablespoons of dough on two baking sheets.
  6. Bake for 10 to 12 minutes, then cool the cookies on the sheets for 15 minutes.
