Ingredients
- 1 1/2 cup cherry tomatoes
- 1/2 cup fresh basil leaves
- 1/4 cup oil-packed sun-dried tomatoes
- 1 tsp oil from jar of sun-dried tomatoes
- 1/2 tbsp capers
- 2 clove garlic
- 1 tsp onion powder
- 1/4 tsp salt
- 1/4 tsp ground black pepper
- 1/2 cup balsamic vinegar
- 1 large baguette
- 1 tbsp oil from jar of sun-dried tomatoes
Steps
- Heat the oven to 400 F and slice the baguette into thin pieces.
- Brush the bread with 1 tablespoon sun-dried tomato oil and toast on a baking sheet for 5 minutes.
- Simmer the balsamic vinegar in a small saucepan over medium heat for 6 to 8 minutes, until thickened.
- Chop the cherry tomatoes, basil, sun-dried tomatoes, and garlic, then mix them with the capers, onion powder, salt, pepper, and 1 teaspoon tomato oil.
- Spoon the tomato mixture over the toasted bread.
- Drizzle the warm balsamic reduction over the bruschetta.
