Steps

Heat the oven to 450 F.
Boil the potatoes in salted water for 20 minutes, until easily pierced.
Drain the potatoes and let them steam dry for 5 minutes.
Place them on a large baking sheet and press each one flat.
Melt the butter with the oil, brush it over the potatoes, and season with salt and pepper.
Roast for 25 to 30 minutes, until deeply browned and crisp.
