Ingredients

  • 1 cup butter
  • 1/2 cup sugar
  • 1 large egg yolk
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1 1/8 cups all-purpose flour
  • 1/2 cup dried cranberries
  • 6 tbsp finely chopped crystallized ginger (optional)

Steps

  1. Heat the oven to 350 F and line a baking sheet with oil.
  2. Beat the butter, sugar, egg yolk, vanilla, and salt in a bowl until smooth.
  3. Stir in the flour, dried cranberries, and optional crystallized ginger to make a firm dough.
  4. Shape the dough into a log, chill it for 10 minutes, and slice it into rounds.
  5. Arrange the slices on the baking sheet and bake for 12 to 15 minutes, until the edges are lightly golden.
  6. Cool the cookies on the baking sheet for 5 minutes.
