Ingredients

  • 1 tbsp ground flaxseed + 3 tbsp water
  • 1/2 cup creamy almond butter
  • 1/3 cup coconut sugar
  • 1/2 tsp vanilla extract
  • 1/4 tsp baking soda
  • 1/8 tsp salt
  • 1/4 cup cranberries
  • 1/4 cup chocolate chips

Steps

  1. Stir the ground flaxseed and water in a small bowl, then rest for 5 minutes.
  2. Heat the oven to 350 F and line a baking sheet.
  3. Mix the flax mixture, almond butter, coconut sugar, vanilla, baking soda, and salt in a bowl.
  4. Fold in the cranberries and chocolate chips.
  5. Scoop 12 portions onto the baking sheet and flatten each one slightly.
  6. Bake for 10 to 12 minutes, then cool the cookies on the sheet.
