Ingredients

  • 1 cup self rising flour
  • 2 tbsp monk fruit sweetener (optional)
  • 2 tbsp frozen butter
  • 1 cup small curd 2% cottage cheese
  • 2 tbsp 0% milk (optional)
  • 1/2 tsp pure vanilla extract
  • 1/2 cup sugar-free chocolate chips

Steps

  1. Heat the oven to 350 F and line a baking sheet.
  2. Grate the frozen butter into a medium bowl.
  3. Stir in cottage cheese, vanilla, and monk fruit sweetener until combined.
  4. Fold in flour and milk until a soft dough forms.
  5. Stir in chocolate chips and place eight portions on the baking sheet.
