Ingredients

  • 1 can (13 1/2 oz) coconut milk
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup butter
  • 4 eggs
  • 2 jars (12 oz) coconut strings in heavy syrup
  • 2 1/2 cups mochiko sweet rice flour
  • 1 cup packed brown sugar
  • 1 tbsp vanilla extract

Steps

  1. Heat the oven to 350 F and grease a 9-by-13-inch baking pan with cooking oil.
  2. Melt the butter, then whisk it with coconut milk, condensed milk, eggs, and vanilla.
  3. Stir in the mochiko flour, brown sugar, and coconut strings until evenly combined.
  4. Pour the batter into the pan and bake for 45 minutes until firm in the center.
  5. Cool the bibingka for 10 minutes before cutting it into pieces.
