Ingredients

  • 1/2 cup vegetable oil
  • 1 1/2 cups white sugar
  • 2 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 cups shredded zucchini
  • 1/2 cup chocolate chips

Steps

  1. Heat the oven to 350 F and line a 12-cup muffin pan.
  2. Stir the oil, sugar, and vanilla in a large bowl.
  3. Mix the flour, cocoa, baking soda, and salt in a second bowl.
  4. Fold the dry mixture, zucchini, and chocolate chips into the wet mixture.
  5. Divide the batter among the cups and bake for 18 to 20 minutes, until set.
