Ingredients

  • 1/2 cup unsalted butter
  • 1/4 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1 tsp pure vanilla extract
  • 1 large egg
  • 1 cup plus 2 tbsp all-purpose flour
  • 1/2 tsp baking soda
  • 1/8 tsp salt
  • 2 cups maple pecan granola
  • 1/4 cup finely chopped pecans
  • 3/8 cup semi-sweet or bittersweet chocolate chips
  • 1/5 tsp cinnamon (optional)

Steps

  1. Heat the oven to 350 F and lightly grease two baking sheets with cooking oil.
  2. Beat the butter, brown sugar, and granulated sugar until smooth, then beat in the vanilla and egg.
  3. Stir in the flour, baking soda, and salt until a soft dough forms.
  4. Fold in the granola, pecans, chocolate chips, dried cranberries, and cinnamon.
  5. Drop 15 rounded portions onto the baking sheets and bake for 12 to 14 minutes, until the edges are browned.
  6. Cool the cookies on the sheets for 10 minutes before moving them.
