Ingredients

  • 1 large spaghetti squash
  • 2 tbsp extra virgin olive oil
  • salt & pepper
  • 1 cup baby spinach
  • 2 tbsp feta
  • 2 cups chocolate chili

Steps

  1. Heat the oven to 400 F and line a baking sheet with oil.
  2. Cut the squash in half lengthwise, remove the seeds, and rub the cut sides with olive oil, salt, and pepper.
  3. Place the squash cut-side down and roast for 40 minutes until the flesh is tender.
  4. Heat the chocolate chili in a saucepan over medium heat for 8 minutes.
  5. Scrape the squash strands into a bowl, then stir in the spinach and half of the feta.
  6. Fill the squash shells with the mixture, top with the remaining chili and feta, and bake for 8 minutes.
