Ingredients

  • 1/2 cup salsa
  • 3 cups cooked shredded chicken
  • 1 1/2 cups shredded monterey jack cheese
  • 1 tbsp taco seasoning
  • 12 corn tortillas
  • 1/3 cup oil (optional)

Steps

  1. Heat the oven to 425 F and oil a 9-by-13-inch baking dish.
  2. Mix the chicken, salsa, taco seasoning, and Monterey Jack cheese in a bowl.
  3. Warm the tortillas in a dry skillet for 30 seconds per side.
  4. Fill each tortilla with the chicken mixture, roll tightly, and place seam-side down in the dish.
