- 1/2 banana
- 1 egg
- 3 tbsp milk
- 1/2 tbsp coconut oil
- 1 tbsp maple syrup
- 1/2 tsp vanilla extract
- 1/4 tsp almond extract
- 5 tbsp buckwheat flour
- 2 tbsp almond flour
- 1/4 tsp baking powder
- 1 pinch salt
- 1/4 cup frozen cherries
- 1 tbsp almond butter
Steps
- Heat the oven to 350 F and grease a 6-inch baking dish with coconut oil.
- Mash the banana in a bowl, then whisk in the egg, milk, maple syrup, vanilla, almond extract, and remaining coconut oil.
- Stir in the buckwheat flour, almond flour, baking powder, and salt.
- Fold in the frozen cherries and spread the batter in the dish.
- Bake for 25 minutes, until the center is firm and the egg is cooked through.
- Spread the almond butter over the warm bake.
