4 cups cauliflower florets
1 egg
1/2 cup onion
1/3 cup shredded parmesan
1/3 cup shredded cheddar
1/4 cup finely ground breadcrumbs
salt and ground fresh pepper to taste (optional)

Steps

Heat the oven to 400 F and oil a baking sheet.
Boil the cauliflower in a medium pot of water for 6 minutes, then drain well.
Mash the cauliflower with the onion, egg, Parmesan, cheddar, breadcrumbs, salt, and pepper.
Shape the mixture into small tots and place them on the baking sheet.
Bake for 20 minutes, turning the tots halfway through.
