Ingredients

  • 1/4 cup butter
  • 1 cup sugar
  • 1 large egg
  • 5/8 cups mashed ripe bananas
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup semisweet chocolate chips
  • dried banana chips (optional)

Steps

  1. Heat the oven to 350 F and grease a 10-inch cast-iron skillet with cooking oil.
  2. Melt the butter, then stir in the sugar, egg, bananas, and vanilla until smooth.
  3. Whisk the flour, baking soda, and salt in a bowl, then stir them into the banana mixture.
  4. Fold in the chocolate chips and spread the batter evenly in the skillet.
  5. Bake for 30 to 35 minutes, until the center reaches 165 F and a toothpick comes out mostly clean.
  6. Cool the bread in the skillet for 10 minutes before slicing.
