  • 6 tbsp basil pesto
  • 2 tbsp mayonnaise
  • 4 focaccia squares
  • 8 oz fresh mozzarella
  • 2 roma tomatoes
  • 1 cup fresh arugula
  • 12 large fresh basil leaves
  • balsamic glaze (optional)
  • extra-virgin olive oil
  • flakey salt (optional)
  • freshly cracked black pepper (optional)

Steps

  1. Stir the basil pesto and mayonnaise together in a small bowl.
  2. Slice the mozzarella and roma tomatoes into thin rounds.
  3. Spread the pesto mixture over the focaccia squares.
