Ingredients

  • 3 cups cooked beets
  • 1/3 cup feta cheese
  • 2 tbsp shelled pistachios
  • 1/4 cup minced parsley
  • 2 tbsp minced mint
  • 1 tbsp extra virgin olive oil
  • juice of 1/2 a lemon
  • salt and pepper to taste (optional)

Steps

  1. Cut the cooked beets into bite-size pieces and place them in a bowl.
  2. Whisk olive oil, lemon juice, salt, and pepper in a small bowl.
  3. Add feta, pistachios, parsley, and mint to the beets.
  4. Pour the dressing over the salad and toss gently.
