- 6 large nellie’s free range eggs
- 5/8 cup diced bell pepper
- 1/2 cup chopped spinach
- 1 cup grated cheese
- salt (optional)
- 24 wonton wrappers
- chopped green onion
- sour cream or greek yogurt
- pico de gallo
- everything bagel seasoning
- hot sauce
Steps
- Heat the oven to 350 F and press two wonton wrappers into each cup of a 12-cup muffin pan.
- Whisk the eggs with salt and pepper, then stir in the bell pepper, spinach, and cheese.
- Divide the egg mixture among the wonton cups and bake for 16 to 20 minutes, until the eggs are firm.
- Cool the cups for 5 minutes, then top them with green onion, sour cream or yogurt, pico de gallo, seasoning, or hot sauce.
