Ingredients

  • 1/2 cup freshly squeezed orange juice
  • 2 tbsp freshly squeezed lemon juice
  • 2/3 cup granulated sugar
  • 1 tbsp +1 teaspoon cornstarch
  • 3 half-pints fresh blueberries
  • 1/2 tsp vanilla extract
  • lemon zest from 1-2 lemons (optional)

Steps

  1. Whisk orange juice, lemon juice, sugar, and cornstarch in a medium saucepan.
  2. Cook over medium heat for 2 minutes, stirring until smooth and thickened.
  3. Add the blueberries and simmer for 5 minutes, stirring gently.
  4. Remove the pan from the heat and stir in vanilla and lemon zest if using.
  5. Cool for 3 minutes before serving or chilling.
