Ingredients

  • 3 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 large egg
  • 1 1/2 tsp vanilla extract
  • 1 cup unsalted butter
  • 1 tbsp cornstarch
  • 1/2 cup granulated sugar
  • 1 1/2 tbsp lemon juice
  • 4 cups fresh blueberries

Steps

  1. Heat the oven to 375 F and line a 9-by-13-inch pan with cooking oil and parchment.
  2. Mix flour, both sugars, baking powder, and salt, then cut in the butter until coarse crumbs form.
  3. Stir in the egg and vanilla until a crumbly dough forms, then press two-thirds into the pan.
  4. Toss blueberries with cornstarch, 1/2 cup sugar, and lemon juice, then spread them over the crust.
  5. Crumble the remaining dough over the berries.
  6. Bake for 45 to 50 minutes until golden and bubbling, then cool for 20 minutes before cutting.
