Ingredients

  • 3 large eggs
  • 1 cup granulated sugar
  • 1/4 cup light olive oil
  • 2 cups all-purpose flour
  • 2 1/2 tsp baking powder
  • 1 tbsp lemon zest from 1 large lemon
  • 1 tsp vanilla extract
  • 1/3 cup seltzer water or club soda
  • 10 oz mixed berries
  • 3/4 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 4 tbsp unsalted butter
  • 1/4 tsp sea salt

Steps

  1. Heat the oven to 350 F and grease a 9-by-13-inch baking pan with cooking oil.
  2. Whisk the eggs, sugar, olive oil, lemon zest, vanilla, and seltzer water until blended.
  3. Stir in 2 cups flour and baking powder, spread the batter in the pan, and scatter the mixed berries over it.
  4. Rub the remaining flour, sugar, butter, and salt together until crumbly, then sprinkle the topping over the berries.
  5. Bake for 35 to 40 minutes until the center is firm and the topping is golden.
