Ingredients
- 2 cups cooked quinoa
- 1 lb ground beef
- 1 clove garlic
- 1 cup frozen peas
- 1/4 cup pesto
- 1 cans (15 oz) diced tomatoes
- 1/2 cup ricotta
- 2 tbsp balsamic vinegar
- salt & pepper
- 4 oz burrata (optional)
Steps
- Heat the oven to 425°F and lightly oil a 9-inch baking dish.
- Brown the ground beef with the garlic in a large oven-safe skillet for 6 minutes, until it reaches 160°F.
- Stir in the quinoa, peas, tomatoes, pesto, balsamic vinegar, salt, pepper, and ricotta.
- Transfer the mixture to the baking dish and bake for 10 minutes.
- Rest the bake for 2 minutes before serving.
