- 1 tsp onion powder
- 1 tsp ground cumin
- 2 tbsp vegetable oil
- 2 tbsp all-purpose flour
- 3 tbsp chili powder
- 1 tsp garlic powder
- 1 tsp dried oregano
- 3 tbsp tomato paste
- 2 cups chicken or vegetable stock
- 1/4 tsp fine sea salt
- 1 lb 90/10 ground beef
- 1/2 tsp kosher salt
- 1/2 tsp freshly cracked black pepper
- 1 small yellow onion
- 1 red bell pepper
- 3 cloves garlic
- 1 can (7 oz) diced green chiles
- 1 can (15 oz) black beans
- 2 cups corn
- 12 corn tortillas
- 1 1/2 cups shredded pepper jack cheese
- 1 1/2 cups shredded medium cheddar cheese

Steps

- Stir in the green chiles, black beans, and corn, then cook for 3 minutes.
- Layer sauce, tortillas, filling, pepper jack, and cheddar in a 9-by-13-inch baking dish.
- Bake uncovered at 375 F for 30 minutes until bubbling, then rest for 8 minutes before adding any optional toppings.
