Ingredients

  • 490 g all-purpose flour
  • 5 1/2 +1/8 tsp baking powder
  • 1 pinch salt
  • 8 oz butter
  • 320 g turbinado sugar
  • 4 ea. eggs
  • 950 g mashed banana
  • 2 1/2 cups walnuts
  • turbinado sugar for sprinkling (optional)

Steps

  1. Heat the oven to 350 F and grease a 9-by-5-inch loaf pan with cooking oil.
  2. Whisk the flour, baking powder, and salt in a large bowl.
  3. Beat the butter and turbinado sugar, then mix in the eggs and mashed bananas.
  4. Stir the flour mixture into the banana mixture, then fold in the walnuts.
  5. Pour the batter into the pan and sprinkle the top with turbinado sugar if desired.
  6. Bake for 40 to 45 minutes until the center is firm and a tester comes out clean.
  7. Cool the loaf in the pan for 10 minutes before slicing.
