Ingredients

  • 1 cup coconut oil
  • 1/3 cup mashed ripe banana
  • 3/4 cup organic cane sugar or granulated sugar
  • 2 1/2 cups gluten-free flour blend or unbleached all-purpose flour
  • 1 tsp pure vanilla extract
  • 1/4 tsp sea salt
  • 1/4 cup pecans
  • 1/4 tsp ground cinnamon (optional)

Steps

  1. Heat the oven to 350 F and grease two baking sheets with oil.
  2. Beat the coconut oil, mashed banana, sugar, and vanilla in a large bowl.
  3. Stir in the flour, salt, pecans, and cinnamon until a soft dough forms.
  4. Chill the dough for 15 minutes.
  5. Shape the dough into 24 small rounds on the baking sheets.
  6. Bake for 12 to 15 minutes, until the edges are lightly golden.
  7. Cool the cookies on the sheets for 10 minutes.
